What vintage bikes - 70s and 80s could be considered all arounders? I do not mean road bikes or touring bikes. I mean an all purpose bike that could run either road racing tires like 23s or fat commuter/touring tires like 32s all the way to 45s. What bikes with the geometry of the Salsa Casseroll existed a few decades ago?

Specific geometry, I don't know about. My 1972 Schwinn, P-15 Paramount will run 35mm and full fenders with room to spare. I think without out the fenders, it could easily run something inthe 40mm range.

My 1981 Trek 710 will run 32mm tires w/full fenders. Both could run thinnner tires if need be. Most all rounders can either be touring bikes or road bikes, hence the term "all rounder"...........

Many bikes, much like motorcycles of the period, up until the 80's I guess would fit your definition of a good all rounder. By the 80's every tubing manufacturer had a half dozen tubesets, every component manufacturer had a half dozen component groups, mountain bikes arrived on the scene and you start to see the specialization. How about the ubiquitous Peugeot P8 series most commonly represented by the UO8 in the US. The same basic frame came setup for everything from sport riding to sport touring to semi-loaded touring with lights, racks and fenders with dropped bars or upright bars, take your pick. Here's mine set up in traditional road trim. Today it is set up "cross" style with 32mm nobbies MTB clipless pedals.
