Fortunately these fully equipped models seem to have some kind of built in protection from being defiled as I have seen many that were unmolested. I think it has to do with the integrated rack/fender assembly that most hackers are somehow smart enough too leave alone, at that point they leave it all as is. I also believe that the owners of these have a better appreciation for them and protect them from harm to a certain degree. imho
(It's funny, I started trolling Craigslist because I was looking for a used bike for my girlfriend. I found one and bought it--a practical 3-speed commuter--but now I've discovered this site and I can't stop looking at vintage bikes.)

I passed on an original one (same color, but this looks like a 22" frame) for $200 many years ago. Parts on the original weren't that fancy so this one, while not original, is not defiled in the worst way imaginable and probably has some changes you'd have made to it had it been yours.
Bikes are okay, I guess.

So it wasn't mostly Campy, I have seen a few of these that were full on and gorgeous. One at Eroica and it was awesome.

I don't know the specs of the line at that time, but I know Campy was available at extra cost at times; you could pay extra for Campy brakes on a Paramount that was otherwise all Campy. The ladies' Paramount that I saw had, I believe, Shimano Crane rear derailleur, Nervar crank and had centerpulls like the one pictured above. It might have had Campy hubs but not much else. The one you saw at Eroica might have had the Campy retrofitted. I'd be surprised if a stepthrough came that way but I'm sure someone more knowledgeable will let us know for sure.

So according to the googlesphere and as I thought/remembered the 73,4,and 5 Schwinn catalogs show the ladies Paramount being full Campy save for the brakes and the rear derailleur on the 15 speed deluxe touring model being the Crane long cage/Schwinn approved GT300. Campy brakes were optional and all of this holds mostly true for the men's models as well. Like I said, imho the subject in question has been defiled and rather poorly so.
Also, the one I saw at Eroica was original, with provenance on loan for the ride to see if the woman wanted to own a very cool piece of cycling history as it was in very good full functioning condition. I would be willing to bet she owns that Paramount now, she was thrilled with it and I did my best to bolster her feelings as I love these and can't wait to find my wife one.

There are two pair of the exact same pedals you mentioned sitting on my shelf in the shop, but I'm leaning more towards some nice alloy platforms on this bike. I never really liked the fumble-footed starts from a red-light, trying to clip-in on one side only. This bike feels "intuitive", and you are spot-on about that frame; it feels light and tight, yet still soaks up the bumps much like the Ishiwata 024 on my Ross. So I want to be able to engage the drivetrain intuitively too. I'll revisit SPD if I ever decide to take it touring.
