dropouts and serial number
drop outs are indeed Shimano (Shimano FS??)
and for what it might add, the serial number is : 5962329, whatever that signifies.

It appears it's a first model Vent Noir - but later model before the Vent Noir II and the Inter 10 replaced it. I'd either ride it as is, or swap-out the Shimano as NOS and replace it with Campagnolo. But that's me - always tinkering...

Nice stuff! Dont sell the Shimano components! Only replace to save its historical value so you can put it right back and ride according to the contructors intentions.
