In regards to the possible switch to a triple crankset, how does one determine if the FD will handle a triple? I've seen cog limits listed for RDs, but I haven't seen (or haven't noticed) similar travel/range specs for FDs.

The Campagnolo front will handle a triple... the ability to work well with a chainring under 36 is variable. Tweaks can be done, but its not a triple specific design.

Also I don't know how much you weigh but I know that also plays a part in climbing ability.After all your fighting gravity when you think about it.

Will I think N+2 is an even better solution or maybe N+3 if there the right size and a good price. I'm currently running 54/38 front and used 13-28 with one dead smallest unused 12-28 8 speed runs great and I'm considering both a 36 small front and maybe a 9 speed 11-30 with one dead gear. On my vintage rider.

I suggest you look for a LBS [local bike show] where the owner is also a local rider, and works as one of the mechanics in the shop. He'll get you the right advice and service that you need. Stay away from the "chain" bike shops. Your bike looks great.
