I guess the sensible thing is to set a time budget and a money budget before you start. Once you exceed either budget, stop and drag the bike to the curb. Unless you set both budgets too high, you will probably not finish getting the bike done, but it's possible you will.

...not worth it. Probably has 26x1 3/8 tyres, which while findable, can be problematic to obtain. The single speed aspect is appealing, and certainly it will work for this, but the brakes were (on most models) kinda low end. Iverson made/marketed a lot of different bikes over the years. Some of them are probably worth renovation as working bikes as you suggest, most are not.
