*AND* you know where the meat came from.
At the moment Deer is the last meat I'll grab out of the freezer.

1. Gator
2. Antelope
3. Caribou
4. Bison
5. Aoudad (sheep)
6. White tail.

Marinated in buttermilk and black pepper. Pressure cook for 30-40 minutes then finish off on the grill with BBQ sauce. My preference is a honey BBQ sauce
Make sure it's a young'n. Older ones leave for the buzzards... who usually leave it out to rot for a few days since they are that tough.

We have turkey here. Like that smoked.
Forest rat (squirrel) I pass on. Pheasants and quail are about non-existent. Dove in September. Wrap that in bacon and it's a tasty deal.

Now, as @TrojanHorse would say...

I've had forest rat a few times in my life. I like it about the same as the skinny rabbits we have around here. Sadly we don't have a huntable population of squirrel so they were from Iowa when my dad would go back there to visit relatives. Ate some when we lived in southern Oregon as a kid. I like ducks and spruce grouse. Pheasants and Huns were good the few times I was able to get them. Elk is better than deer. Whitetail is better than Mule deer. For me riding a bike is better than hunting since once I started the former I've not done any of the latter.

There have been a few days sitting in the woods where I was asking myself "self, are we hunting Deer, Woodchucks, or tree rats ?" because I saw lots of the latter two and none of the former :-).
