Of the current fleet, I'd keep the cyclocross bike, as long I can also keep the second set of wheels. I already use it as a commuter, road bike, cyclocross racer and light trail riding bike so in a pinch it can substitute for heavy commuter and my mountain bike, although it can't replace the tandem.

Maybe if you got the right rear rack?

I almost sold my Merican too, but I decided to keep it in case the 84 Schwinn Le Tour Luxe gets a little long in the tooth and becomes time to retire it. I rarely use the Mercian but someday I probably will have to use it for more touring.

I got to visit the Mercian "factory" while I was in England (the "factory" and the Cycle shop are separate), it was totally bazaar how old fashion everything looked, but once they explain why they do brazing of the frames like they do you suddenly realize that their doing it the best way! I had a wonderful experience with those guys there and someday I would like to go back for a visit again, maybe while touring England on a bike. The store is actually surprisingly small but they do a lot of business, and they don't just sell Mercian there.

I currently have three bikes: a road bike, a cyclocross bike and an old hybrid. Though that last one isn't really functional at the moment. Currently I commute on both the cross bike and the road bike. I also race those bikes. If I had to keep just one, it would be the cross bike. I already use it to commute, and in a pinch it would work for road racing. But I'm glad I don't have to choose, and having only one bike makes you pretty vulnerable to mechanical problems. If something on the bike is broken, you just can't ride it until it's fixed.

My first bike (as an adult) was not at all what I ended up wanting. It was a GT Timberline, a "comfort" bike with entry level components and cheap front suspension. I outfitted it with a rack and fenders and it did OK for me, but after a year I knew I wanted something else. My second bike, a 2008 Kona Jake, was great and I used it for everything for years. My only complaint was that I wished it had disc brakes. So the first year Kona made a Jake with disc brakes I bought it, and that's the bike I'd keep now if I could only keep one.

Of course, a secondary purpose of bikes 2 through N is to teach you what else you want for bike N+1.
I believe this to. My first adult bike was a Gary Fisher comfort type bike, it had suspension and 700c wheels. Now look at me? I have gone so far from that style of bike its ridiculous.

I've got second thoughts about all my bikes, they all seem compromised in some way or other. The MTB is too cheap, the commuter roadie I don't yet have set up perfectly, Dad's Paramount is a size too big. Of them, I'd keep the MTB, it's the most versatile.
