He's not slow. He's one of the smartest people I know. He's just got the social grace and personality of a garden slug.
Also it seems like it would be a lot more distasteful for my to unload all this to his face and make him cry than it is to make a minor complaint to you strangers who can't possible connect with this person, thus giving me a small outlet while preserving this guy's mental state.

A witty comeback is highly unlikely to have any effect -- he probably figured you'd expend too much energy on it (which you already have) making it part of the sport.

Why does it bother you so much if a nonrider questions your cycling creds because you didn't ride in a winter snowstorm with driving winds? And why do you think he'd be upset if someone he doesn't like insults him?

I found the good natured ribbing from my coworkers about me riding in not so good weather ended when they found out I did ride in that day. The expected good natured ribbing about being a wimp turned into offers of a ride home, and later they took my riding in colder weather for granted. It's not easy for people who think of bicycling as mainly coasting a few blocks in warm weather to understand pedaling for more than 10 minutes in colder/windier weather, especially when it gets dark out. But with time they got used to it as it was the way I got to work a couple of times a week.

my co-workers worry i will get sick or hurt while riding. they are always offering help. they will kid me a bit when i dont ride but its all goodhearted.

The weather here today is the apocalypse. That's the best way to describe it. It hasn't been above 20 degrees in a week. Today there are 50 mph winds and snow blowing sideways creating random white out conditions. Walking the 100 feet from my car to my office door felt like a trip up Mt Everest.
I think 5 people have asked this week if I've rode my bike to work thinking they are funny. The minute I think the roads are almost safe enough to ride on, I will be giving them more fuel for the fire.

When the weather gets bad, the traffic congestion will be worse because there's likely a collision somewhere. I usually ride anyways. I'll get to work a little later but I still would pass traffic.
If the snow is so bad that I can't ride, I walk. My commute was only 4.5km or 55 minutes of hiking through the snow.

I just had some dental work done yesterday...
As I was leaving, the receptionist almost looked a bit worried sending me home 15 miles on my bike with a numb mouth and a chunk of gaze that I was supposed to put pressure on the mouth with.
The ride actually went pretty well. Perhaps it is better riding than sitting home thinking of how one's mouth ached.

I used to commute by bike year-round here in the frozen tundra of Wisconsin. I found reactions to my doing so very polarizing.
There were two distinct groups - those who supported me and gave me "way to go!" reactions, and those who thought I was crazy and didn't hesitate to let me know. Very rarely would I get the kind of sarcasm the OP did, but when it happened, I would smile and get back to whatever I was doing. Obviously the intent of the comment was to rile you. Don't act riled, and most likely it will stop.

A few years ago we had air temps around -20F with 20+ mph winds (-45F windchills); I opted to drive that day. A biking buddy texts me to ask if I biked to work, I responded "Nope, I'm just a fair weather biker". Feel free to use that line if any other morons make comments.

It's 0 degrees F where I live and weekly I have a customer that comes into the shop wearing shorts. I hope his car doesn't break down and he has to walk somewhere for help because if the temps don't get him the windchill will.
