Buy new bike for parts?

I recently acquired a 2000 Specialized rigid 21 speed MTB (missing many parts) and want to build it up into a commuter/light touring bike. I have been looking for a used bike to strip, but no luck, yet. So, after pricing new individual components, I had the idea that I could order an entry-level bike online (~$300) and strip it for parts. I need rear/front derraileurs, shifters, seat, brake calipers and levers...and I wouldn't mind an extra set of wheels.

The problem is that I need to find a 21 speed and would get low end components, but I certainly don't need top of the line Shimano. Has anyone had any luck with such an undertaking?

If you think this is a bad idea, let me know why...and then let me know who (other than Nashbar or Performance) has a good selection of inexpensive components.

You can often get a decent complete bike with good parts for far less than the price of the individual parts...especially in the fall when shops are looking to clear out stock at prices that sometimes approach cost.
