Came across this article while looking for something else and thought it might be of interest to some here. If you scroll down to the variations, there are some simple and good options.

I've tried several variations, and I got the ideas from that article.
Its a great way to try out the idea of wool knickers without spending a lot of money. I think I have $20 invested in 5 pairs. I like them all, but now I know exactly what I want when I spend the money on a quality pair of knickers.

Pedalin' Erry Day
Wish I'd seen that article a months ago, I've got a pair of DIY wool knickers and I would have finished the bottoms a little differently - they work great on the bike but when I change to work pants I have to take my shoes off first. I was already working a button into my next pair, but I like way she placed hers better than what I was planning.

Just hack off a pair of wool dress slacks and be done. You'll look cooler. That seems like alot of work to look weird. And whats with the author dissing lycra and such? That's how I took it. You can hack off your dress slacks and look cool or take the time to hem, sew, button, cut, knit one pearl two and look like you did when you were 4 years old. No thanks.

For me, the advantage of wool knickers over lycra or long pants is they can be worn over a wider temperature range. I find that I have to dress for the early a.m. ride, pack work clothes AND clothes for the p.m. ride home. Lately its been in the 50's in the morning and the 80's in the afternoon. Pants would be too hot in the afternoon and shorts (lycra or otherwise) would be too chilly for the morning. Wool knickers work well for both temps. That means less crap I have to lug around.
I thought they looked silly at first, but several coworkers complimented me on how they looked. We tried doing the rolled hem, but they didn't come out well. We ended up just cutting them at the right length, cutting out the notch, doing a basic hem, and adding cheap sew-on snaps to keep them from ballooning. One pair was a slim enough fit that they didn't need the snaps.

What is the purpose of adding on the removed cuff? It seems you could just cut the 2 inch gap, roll the bottom, and be done, right?

I suspect the purpose of it is "author cut the pants too short, came up with this workaround, and then forgot it was a workaround.".
