I suspect that you just don't notice it because you're so used to it. Cars may look like they are coming to a stop more than bikes do, because they usually drop down from a higher cruising speed, but if you actually watch, they almost never do a full stop if there is no other traffic to stop for.

Generally they are coming more to a stop than bikes do - I very rarely see a car rolling through a stop sign at more than 5 mph, but I often see cyclists pedalling straight through at 15+ mph.

When cycling, I generally do a "car-style California stop", i.e. hitting the brakes and slowing to a crawl before proceeding.

I do the same. I realized I couldn't feel smugly superior to car drivers if I drove worse than them. So I deliberately do the same partial stop on my bike that I would if I were in a car.

Watch the wheels of the cars as they are making their "stop". They never stop rotating unless they are yielding the right of way or are perhaps lost.
