For what? 23s are not very good when doing technical downhills over rough rocks.

3 inch wide knobbies are not that fast on the track.

Fat or thin - not so much. I prefer my tires to be tall, athletic, sexy, and to look good from behind.

For commuting? I'd opt for at least 25mm. I used to run 32mm and now run 28mm @ 85psi. It all depends on what your streets are like.

I'm getting older, so I leak at times too. But that doesn't change tire pressure on my bike.

I could have a thin 50-559 tire (the "rubber" road-going surface is thin) and a thick 23-622 tire (the surface is very thick as in a Marathon or Conti tire).
