I have a Giant TCX SLR 2. 105 groupset (my 2014 has 10sp, 2015 has 11sp 105). Avid BB7 mechanical disk brakes (more than enough stopping power, once I tuned these bastards correctly). very comfortable ride but still quick and lively. Not the lightest around, but not heavy. It has some mounts for a rack, I just installed mine and it's less than stellar, but works. Can be had for ~$1500
Two of my coworkers have the upgraded SLR 1. Hydraulic disk brakes and 11sp 105. Upgraded carbon fork has a carbon steerer and thru axle design, as well as much nicer, tubeless ready wheelset. Well over the $2000 mark.
I prefer 10sp as a commuter as parts are about half as expensive, and the mechanical disk treat me just fine other than being less hassle free to tune compared to hydraulics.

I commute mostly on my 1995-ish Bianchi Volpe. I'm pretty impressed with it. They have a disc model now.

Not sure if OP has decided on a bike yet, but I just wanted to say that I'm really enjoying my Cannondale Caadx 105 Disc. I got it off CL for a song and with the left over money in my budget, I'm able to swap out all the stock components for Sram Force 22. In the end, I'll have a Cannondale CaadX Force22 Disc for under your $2000 budget.
