1x11 Issues

I just swapped my 2x11 11-32 deivetrain to a 1x11 11-40t and the shimano 105 RD will not shift onto the 40t cog in the rear. It is a longcage derailleur, ive heard many people successfully run the 105 on this cog set, what gives? Ive adjusted the cable

Get a setup which was designed for 1x11 as stock ie. SRAM, or get a converter part, like a Wolftooth Roadlink

Also, Shimano don't make any road RD's as Long cage, only Medium and Short, Long is reserved for MTB's

The cage length only affects chain wrap (the total gear range) not the ability of the the upper pulley to clear the largest cog.

To clear a 40T cog with a 105 derailur, you need the combination of a frame with a longer than normal hanger and a long B screw. Some people might be successful with it and others won't. Sounds like you fall into the latter group.

Just get a Wolftooth Road link. That will lower your deraileur enought to clear the 40T cog.

+1 On the Roadlink.

A Shimano XT mountain bike RD and a Wolftooth Tanpan would be a better option for a 1x gravel bike setup, the clutch RD helps reduce chain slap and eliminates dropped chains.
