Bikes: This list got too long: several ‘bents, an urban utility e-bike, and a dahon D7 that my daughter has absconded with.

Now that makes sense. It would perfect to have canopy and fairing on a recumbent as solar panels. You could even have fold out panels from the canopy for when you're parked. Would not take away from the ride, just add to it. Those DF bikes with the long panels in front and back are just too awkward and unsteady.

All of those setups to not look very wind friendly to me.
It also looks like a setup for people with extra time and a not hurried pace.

I doubt "a hurried pace" is something want to do if you're spending 6-10 hours a day pedaling; besides, with solar/motor/batteries, you can achieve "a hurried pace" with less effort.
The idea a long distance touring is that you stop frequently to see the sights, eat, hydrate for the long run, without being hurried.
If you've watched the video, more than often the panels generate excess power to sustain the daily riding.
Similarly along with others that I've met, when you have a proper setup & enough daylight; you can sustain 45 km/h without pedaling all day.

Solar ebikes are slowly catching on:
With two solar panels and one afternoon, I made my electric bike charge from the sun
