I am setting up my spreadsheet to spit out some statistics for 2006.
What do you keep track of?
Here are the areas that I am looking for.

I used to keep track of my fastest time on a particular 50 km route until I got a ticket for not coming to a complete stop at a stop sign in the middle of a nature preserve where there isn't any cross traffic. Now I no longer care how fast I go on that particular loop.
This month I thought that I might be able to log 1000 miles, but it turns out that I will be a bit short. I'm a little over 840 miles or the month so I'm guessing that I'll be in the low 900's after Sunday. Some unexpected work put a damper on my post-semester riding before Christmas. (I'm a prof, if you didn't know.)
Now I just monitor what kind of ride I need to be doing. This time of year I need to be putting in rides to build up aerobic capacity, so the point isn't so much speed but working a bit below lactate threshold for reasonable distances. For me a 50 mile ride at 20 mph while riding on the hoods is about perfect and that perfectly describes today's ride. A bit later in the season I will start interval training to work on the anaerobic systems. The average speed and overall distances will go down on these rides, but the intensity level when really working will be much higher. I'll "kind of" keep track of these rides to make sure that I don't ramp it up too fast. During the Spring I normally get into a pattern of long aerobic rides on Sunday mornings, a recovery spin on Tuesdays, and intervals/hammer ride on Thursday. I also take my typical bike commutes every work day.

For the past couple years I've been using Cyclistats software to track my rides. It has a lot more features than I use but I like it.
Prior to that I only tracked mileage and average speed.

Oh, I keep track of everything thanks to my fancy garmin and sportracks. However, I really only look at miles/week and miles/month. I do once in awhile look at average speed, cadence, HR etc. But as most people find out you stay pretty consistent so there are no big suprises.

Cyclistats imported from my Polar 720i. It tracks everything, miles, HR, speed, cadence, altitude, calories, temperature, watts, and probably some I have not listed. By importing the data, no manual data is necessary.

I keep an Excel spreadsheet with these columns:
Bike, Date, Time, Distance, Avg. Speed, Cumulative time for Month, Cumulative distance for Month, Where I rode, YTD distance
These feed another spreadsheet that compares months and tracks mileage by bicycle.
Also keep track of mileage and time on Bikejournal.com.

I am just glad that I can keep riding. Just look around at your neighbours or work colleagues and see how many of them do any thing physical or anything at all worthwhile as a hobby. Some of my neighbours play golf and I have though about joining them in ruining a good walk but that would encroach into my riding time.
Jppe- Ruining a good walk is not true as I am a non playing Golfer. I love the sport.

After 25 seasons, I've boiled it down to miles/day, miles/month and miles/year. If a ride is out of the ordinary for weather or average speed, I'll note that, too.
In my racing days, many moons ago, I kept track of everything including calories, HR, subjective feelings, and even sexual events.
