Back-in-the-day (late 1970s until 1990-ish) we did lotsa pasta (and beer) the night before a race/long ride. Afterward we did mucho Mexican with mucho cerveza to recover. Lotsa carbos either way. Did it work? Well . . . sometimes we kicked the locals collective butts, often-than-not we didn't (blame that in part on the routine mechanical failings of our faithful-but-aging team van in not getting us to the start in time). We had lotsa fun regardless, 'nuff said.

30 mile race, no clue, go to the Roadie Forum, look for the "Road Racing" subforum, ask people that actually race.

30 mile ride, I just eat what I feel like. Specifically, cereal, milk, maybe a banana. I try to avoid greasy heavy stuff.

OK, let me clarify. I only ate a small portion of Hamburger Helper. It was in the frig and I didn't feel like cooking. I was still hungry so I stopped at a bakery and the carrot cake muffin jumped out at me. It was dam good, too. I never eat at McD's, but it was either that or KFC, or go to a sit-down place. Actually, I was surprised that the Big mac tasted as good as it did. I usually end up regretting eating that stuff but yesterday it was OK.
The closest fast food place is about 45 minutes from my house so I don't eat that kind of food very often. In fact, hardly ever.
My point was - just eat. As long as it isn't something really greasy or heavy you should be fine. Everything in moderation.

Unfortunately you can't get Big Macs before 10:30 AM.

Fortunately it's summer so there are weekday evening races for which you could pre-gorge on Big Macs.

+1. One article I read said you can burn the glycogen stored in your body tissue for anywhere from 1 to 2 hours. Each human body is unique and you have to get to know your own. For me, 30 miles is my limit for riding really hard with nothing more than a glass of OJ before the ride. For more than 30 miles, yeah, then I want some food before I go.

My point was - just eat. As long as it isn't something really greasy or heavy you should be fine. Everything in moderation.
The saving grace---I have been known to be tempted by Carrot cake in preference to Pie. And After a really long gruelling ride I need fat------- so down to KFC for greasy fatty lumps of chicken and I am fine-Luckily that only happens once or twice a yaer.
