Thanks for all feedback here. I thought with the length of this thread, it would be easier to start a new post. So I did. If you have other awesome suggestions, please check out the "Grow with your bike" thread. In there, I've also stated some more concrete ideas I've come to. Thank you for all the help thus far!

Euromini Urbano is a decent frame and components that won't need much upgrading. It's pretty much good to go at $300. Nothing obvious that needs changing in my opinion. Lifetime warranty on the frame I think and reasonable weight limits. I think it's currently $300 but they sometimes charge $350 for it. I'm in the UK so not totally aware of all that is available in the US market but what I have seen it seems the best value for a folding bike.

Upgrading bikes is often hugely expensive too. Buying an individual part costs more than when it comes on the bike normally. I personally would look to buy a bike at my required specification if possible. I know that isn't always possible because you want to customise a bike a certain way but its makes sense to go for a bike which requires less upgrades.

It's like that joke about having the same broom for 50 years except its had 3 new handles and 4 new brushes. I'm always reminded of that joke when someone says 'I bought a new frame for my bike'.

Origami has a few good choices in your price range. The Gazelle is great overall choice with 7 speeds and very responsive disc brakes. The Crane 8 is near your price range and offers a wider gear range with an 8-speed gear set and Shimano Acera derailleur.
