The other white meat! Regina ChampagneRain Salter's recipe "STUFFED POSSUM WITH CABBAGE CARROTS RICE AN GRAVY"



Possum and Taters Ingredients: 1 young, fat possum 8 sweet potatoes 2 tablespoons butter 1 tablespoon sugar salt

Directions: First, catch a possum. This in itself is excellent entertainment on a moonlight night. Skin the possum and remove the head and feet. Be sure to wash it thoroughly. Freeze overnight either outside or in a refrigerator. When ready to cook, peel the potatoes and boil them tender in lightly salted water along with the butter and sugar. At the same time, stew the possum tender in a tightly covered pan with a little water. Arrange the taters around the possum, strip with bacon, sprinkle with thyme or marjoram, or pepper, and brown in the oven. Baste often with the drippings.

If you are anywhere near "the city" it's best to live catch, cage, and feed possums known food for a bit. Actually not bad. Not great. I would eat one readily before being hungry.

When I was in high school I really enjoyed eating rice pudding (with raisins) from the cafeteria. I would point out to a tablemate how closely it resembled a lump of maggots with some ticks thrown in. I scored several extra helpings that way.

Aint no way Im eating Opossum just no. Skinned them long ago for 5 bucks a pelt and those marsupials stink! This old possum has been here for about 6 years, lives under the barn eating grubs and worms and then leftovers the cats wont eat. They are meaner than they appear just ask my local tomcat that got an azz whoopin by that ugly possum.

Never had to deal with cooking possum, but at one of my jobs in my long ago youth, we had to sell skinned raccoons, all but the head, so the customers could tell it wasn't somebody's missing cat.

One of the damned things about killed me some time ago.

I had an apartment in Jacksonville FL that provided a parking garage. Early one slightly hungover morning I entered that garage with the intention of climbing in my car and leaving for work. As I put my hand on the car door, out of the corner of my bleery eye, I spy some kind of movement. I see the world's biggest, ugliest rat coming around from the front of my car. My reaction could be described as "extreme" as I found myself turning and smashing into a support post, bouncing off of the side of my car, tearing ass out of that awful garage to stumble out and fall in the driveway, tearing the knee out of my pants (I still wore pants back then) when I sprawled on the driveway. Now that I had some fighting space I turned to face the living horror. Out of the garage this goddam possum, making some kind of spastic motion that passes for possum trotting, appears and disappeared into the bushes. At the end of the encounter I had a goose-egg on my forehead, a ruined pair of pants, a skinned knee and torn palm and I was late to work. The upside was I was no longer hungover.

That, is a little superhero. They eat thousands of ticks every season...thereby reducing/slowing the spread of Lyme's disease. (They are not immune. But their immune system is quite good at fighting off Lyme's)
