Fine Dining

Fully processed with the best hormones and antibiotics and some steroids mixed in. Unethically treated but with elevator music in the background. Smoked slowly in the smoker nice tender old chickens. Big drum sticks with the best cold beer money can buy. Heaven on Earth


Cheating with propane. Hank Hill would be proud lol.


I try to smoke food without beer. Doesn’t workout if you are smoking meat you must have a cold beer. That is the Smoking Law.

More Tex Mex style in S Texas. S Texas is different than the rest of the state as for as seasoning. Everything is smoked with mesquite even chicken. Many mesquite trees here imported by cattle drives from Mexico back in the day. The seasoning is more spicy and hotter than most. Hotter and spicy is the best description. Jalapeño peppers added to many foods like black beans are great. Here are two of my favorites sometimes I will mixed them together and experiment.

They also isolated east Texas from Central Texas.

I always thought Texas BBQ was more of a rub and involved pit smoking... (my brother, who owned or managed several Fort Worth area BBQ joints, always told me this...)

Now Hondo is going just a wee bit further with his TexMex style... which I would guess includes mesquite, dry rub, and maybe cumin powder (the beer is mandatory for all BBQ). He also is not doing beef (brisket is king in Texas).

But I suspect that Hondo will still get something quite flavorful. And may slap it on some corn tortillas... you know, for more of that real border flavor.

Now I’m on the Tums recovering from spicy chicken. Headache from the beer maybe some pepto bismal… beer not settling to good. Listening to Darkthrone a dose of Norwegian black metal. Taste good but hellacious belly ache. Dang getting old no longer have an iron gut .. aging sucks.

i would have been perfectly happy with a 12-pack of fresh (still hot) corn tortillas (street taco size) and a nice dipping, slightly spicy salsa verde.
the drumsticks looked great even tho more of a thighs guy.

Maybe it's just the "heavy metal" in your diet...

And yes aging sucks... I can no longer party like I was 25... back then a day of cycling (like 65 miles or more) was often followed by a night of beer and later, dancing.
These days, just walking a few miles, running a few flights of stairs, and then having a single beer is likely to find me in bed by nine... WTF?

Hondo, that bad boy is for sale... wouldn't it be great down in your neck of the woods? Maybe park it "in town," just to the northeast of that Best Western... in that lot on the north west corner of 90 and 173... the smell of BBQ can stop traffic no matter which way the wind is blowin'.

You'd be competing with Bill Miller... but he ain't got a truck. People would stop just to see the truck. Of course, I suspect you'd always be "outta beer, again."

My brother had a BBQ place up near Tarrant County... in a dry county... somehow folks always managed to have their own beer in hand when they visited his place. Now that was some 20+ years ago... and things have changed just a bit...

Minor issue... Just get about 1000 of your friends together with 350 bucks apiece, and tell them you're bringing great BBQ to town. (assuming the other guy only has mediocre BBQ... )

Now, you've got a thousand friends, right?

OK OK... 350 friends, with a $1000 each... yeah, that'll do it.

Oh and you might need to come up with a few bucks for beef, chicken and pork... and maybe a recipe or two... but hey... why not.
