My mom made dutch babies all the time for breakfast when I was a kid. They are awesome! When we have family gatherings this is the thing we most often request. My little brother has become quite good at making them too which is impressive, since he once filled my house with smoke from just trying to bake an over ready pizza.

yeah, it does fall a bit after it comes out of the oven. but thats what it looked like pretty immediately.

The most common reason for a lack of rising is that the baking vessel was not hot enough when you poured in the batter, it cooled off too rapidly before being returned to the oven or the oven was not hot enough. I heat up my glass pie plates for a good 15 minutes or so at 400 degrees. I pull out the pie plate, add the butter, swirl the plate around quickly until it melts and sizzles, add the batter and return to the oven. Total elapsed time out of the oven is less than a minute. You could also try adding the butter to the baking vessel for the last five minutes of preheating, but watch it carefully to ensure it does not burn.

If you are using a metal skillet, try making them at a temperature of 425 degrees.
