June 2013 FOO Photo Contest--We have a winner!

Sorry I'm a little late, I was on a mini vacation.

The winner of April's contest was Machka & LampLight....her theme is Delicious Desserts!!!! Cakes, Pies, Ice Cream w/ toppings! His theme is "Purely Mechanical". In other words, photos of mechanical things that require no electricity or computer components.

The rules are simple:
-You must be the photographer/you can post one photo for each theme
-One entry per month
-Try to make the image a recent one & delicious!!!

Good luck everyone! I can't wait to look at all the food pron.

Rhubarb Pie Plant - 1 by macfred64, on Flickr

Cream Cheese Rhubarb Pie
Ingredients:
FILLING:

1/4 cup cornstarch
1 cup sugar
1 pinch salt
1/2 cup water
3 cups sliced fresh or frozen rhubarb, in 1/2" pieces
1 unbaked pie shell, nine inch

TOPPING:

8 ounce pkg. cream cheese
1/2 cup water
whipped cream
slice almonds
Procedure:
In a saucepan, combine the cornstarch, sugar and salt. Add water and stir until well combined. Add rhubarb. Cook, stirring often until mixture boils and thickens. Pour into pie shell. Bake at 425 F. for 10 minutes. Meanwhile, for topping, beat cream cheese, eggs and sugar until smooth. Pour over pie. Return to oven. Reduce heat to 325 F. Bake for 35 minutes or until set. Cool. Chill several hours or overnight. Garnish with shipped cream and almonds.
Note: A delicious, unusual rhubarb pie.

macfred, it reminds me of my grandmother's la tarte a la rhubarbe
5 cups rhubarb, chopped into cubes
1 1/2 to 2 cups cristallise sugar
two eggs
unbaked pie crust

Topping
1 cup cassonade ambree sugar
ĺ cup of flour
Ĺ cup butter

Place rhubarb in large bowl and pour cristallise sugar over it. Mix with spoon, cover and refrigerate for 24 hours.

Prepare pie crust. Mix with a pastry cutter the ambree sugar, flour and butter topping.

Mix one whole egg and the yoke from a second with the rhubarb and pour into crust. Place crumb topping on top of pie.

Bake for 15 minutes at 450 degrees. Drop heat to 350 degrees and bake for another 35 to 40 minutes.

The topping caramelizes making for a divine pie!!!!!
