Polished stainless lugs
If I were to build a frame with polished stainless lugs, would I polish them before or after brazing? Before seems more logical to me as you don't have to worry about tubes getting in the way or anything. But would the brazing process leave them covered in solder and flux and crud that would ruin your polishing job?

my unqualified intuition would be to do the whole thing first, right down to polishing compound, and then touch it up after brazing.

Polish first. A dremel tool with sanding drums and polishing wheels is your friend.
BTW if this is you first go with stainless steel lugs, read up on brazing stainless steel. Only certain types of filler and flux will work.
