Giant TCR 2008 Road Bike with Cyclecross Tires

Does anyone have any experience with this process? Looking to save myself a 1000 dollars by just fitting my current road bike with some better tires for gravel roads. Not planning on taking this into the woods as I have a mtn bike for that, primarily hoping to set it up so i can bike on a mix of paved and back dirt roads. Class 6 being the most rugged id venture. Im guessing im running a 700 by 23. Anyone know how big of tires i can get before i run into breaking issues? or any better solutions?
