Regarding the op's question, if you're trying to go to just one bike for riding both on and off road, the Kona seems to fit the bill. If you're worried about speed, you could always keep two sets of tires; they take up a lot less space than a second bike.
OTOH, if you're drawn to the Cervelo, maybe the potential for going off road isn't that important to you. In that case go with your gut feeling. The Cervelo, the Giant and the Kona are all very nice bikes, so if you can afford it, go with the one that makes you happiest. You'll be less likely to miss "the one that got away."
