What bike would you compare to a Bianchi Eros?

What bike would you compare to a Bianchi Eros?
Hi all ~
My beautiful 1997 Bianchi Eros was stolen about two weeks ago. She and I had been together close to 10 years, and we'd been on some amazing journeys together.
I'm looking to find a new bike that's comparable to that one.
I used her for
Daily commuting (6-10 miles; I tend to/like to move fairly fast)
Monthly/quarterly touring (20-40 miles each way, with camping gear)
Some longer trips -- 40-80 miles each day, with camping gear, for a few days at a time.
I know some folks might recommend having separate bikes for these things, but part of what I loved about her was that she seemed perfect for all of these things.
If I don't find another Bianchi Eros, what other bikes would you recommend I explore for similar geometry & utility?
Would love some help as I begin this new journey with a new bike friend!

The Bianchi Volpe is a good all-rounder (not the Volpe Disk which has only two chainrings, the plain Volpe with the triple). I road tested it but I ended up buying the Novara Randonee, but the Volpe was a close second.

The Bianchi "Eros" & "Strada"? were their cheapest road bikes for quite a few years. Bianchi renamed, reshuffled their hybrids and other bikes 6,7 -ish years ago. Many sell a rim & disc brake touring bike, of the same model. Like the Jamis. There are still steel frame road bikes. They are just more a niche market.

I took an Eros frame in trade last year and converted to 650b. It has to be one of the nicest steel frames I have ridden.
