wheelbuilding advice

I'm considering building a pair of Enve M50 rims with CK R45 disc hubs for my Seven Airheart to use both in cross races and on the road. Using the prowheelbuilder spoke-length calculator, I get 296mm and 296.8mm spokes required for the disc and non-disc side of the front wheel. Various resources I've looked at suggest rounding down. So I'm assuming I should just get 296mm for both the disc and non-disc side?

Likewise the rear calculations go 297.2 mm and 295.8 mm for disc and drive side respectively so I figure I'll go with 297mm and 295mm. I am planning to use a three-cross pattern with Sapim CX-Ray spokes. (The rims take 28 spokes.) Is that sensible?

Another question: Enve's recommended tire size for these rims is 1.9 in - 2.25 in (ie min width of a bit under 49mm) but the internal rim width is 21mm, which is only 1mm more than the HED Ardennes Plus internal width, and people appear to use 23mm tires on the Ardennes Plus without problems. My frame optimally uses 35mm tires. Would I be okay running 35mm tires on these rims? If so, I'm wondering what might be the best choice for a reliable tubeless 35mm tire for road touring. It seems most of the recommended road options I see top out at 28mm, with 35mm options being gravel tires. My next tour will be exclusively on the road.
