It's been raining here too much, I need to ride everyday to control my blood sugar.
So therefore, I need to put a Roof on my Bicycle:

Good for you. I personally think I'd much rather use a poncho or waterproof jacket, but whatever gets you on the bike and going is what works.

I weigh 200, and even without adding a sail, a strong crosswind gust has pushed me several feet into a traffic lane before.

Not even remotely interested in any sort of fairing or shell that presents a big slab side to the wind like that.

Haven't got the plastic yet... yes I do have some plastic, a neighbor donated a 72 inch clear plastic bag, but I don't think it is "clear" enough , it's a bit foggy...

There are Mylar and Vinyl products used for insulating windows in the Winter, Like THIS:
3M® Indoor Patio Door Insulator Kit (2144W6) - Window Shrink Film Kits - Ace Hardware

Will probably roll it up and unroll it, folding is a possibility. Might have to replace every three times it gets used due to crinkling...

Not for me. (Wind.) But I did winter commute with the Zipper fairings for many years in Michigan and the Pacific northwest. The fairing didn't keep me dry but it did keep me a lot drier and was a huge blessing riding against the wind. Also a full layer of clothes warmer.

If you have to ride year 'round on Long Island, you might look into a fairing as a better alternative when winds are up. (I grew up around Boston. I know those winds.)

In Japan everyone rides with UMBRELLAS and they have a handle bar attachment that makes it easy and... er.... um.... far less "cumbersome" than what has been posted above. I bought one and have it at home. I was planning on driving around Ithaca with it on a rainy day and TAKE ORDERS.

Those products for insulating windows likely won't work. In my experience they're little more than saran wrap and have about the same durability.

We've made it this far in and no one has mentioned how fantastic the OP's bike is? Every time I look at that top pic, I find something new. It's got more attachments than the Mars Rover. My only issue is the height of the roof supports-- unless the OP is really tall, they look really high.

For me, it's the headlights that appear to be 12V track lighting, and not one, but TWO horns. I'm not being sarcastic here-- and I know the internet is mostly fueled by sarcasm-- but this bike just makes me happy. OH, and the GoPro on the end of like a 4 foot pole.

We need more pics. More details.

I often cycle with an umbrella too, just like a lot of people here in the Netherlands. But no attachment to the handlebars, it's usually too windy for that, you have to make sure it doesn't catch the wind underneath. I believe there's a different type of umbrella on the market that makes cycling with an umbrella easier.
