I'd rather like one of these!
Zerode Katipo, designed in NZ.
160mm travel 29er enduro bike, with Pinion gearbox and belt drive driveline.

Zerode Katipo. Sadly not my bike, but this is a really nice looking version!

The Hampsten Strada Bianca. Race geometry designed to clear the 33.3mm Jack Brown tire. If I could snap my fingers and have any bike in the world it would be this.

Andy's personal bike that he leads tours with is the ti version.

Lately I've been toying with the idea of going car-free and changing my car for a cargo e-bike. This one from Riese & Mueller has me drooling. It's costs more than my current car.

That'd do it for me, too... Lugged steel, Metallic emerald green, Phil bottom bracket...

Like always, very nice bikes. Two that stand out for me: Condor Acciaio Stainless and The Hampsten Strada Bianca. I think the Condor gets the drool award. I want it.

In decades of cycling I have ridden many visually drool-worthy bikes that were crappy for me. Not saying they were bad bicycles - just not drool worthy for me to ride or own.
There have been a few that delivered on drool worthy rides for my personally-tuned pleasure.
DeRosa Pro, Merckx CorsaExtra, Calfee TetraPro, MondiaSuper, AustroDaimler VentNoir, others.
Calfee TetraPro semi-custom

never did get around to cutting that carbon steerer. Probably should….drool-wise.
What my fleet lacks is what I SHOULD drool for. Let me look for a pic.

Oh, and Serottas. Every time I see one, I start twitching a little bit.

Or maybe you are just confusing “self-professed bike lovers” with “posers”.
For true bike lovers, “drool worthy” and “easily obtainable” are not mutually exclusive.

Old fg track bikes. Anything from about 1880 to 1920.
