Rear caliper break for cruiser
I added an electric motor and controls for my Electra beach cruiser. The motor free wheels when you back pedal so the existing coaster brake doesn't work, leaving only the front caliper for braking. There is no mount for a rear caliper and I'm wondering if there is some kind of bracket or some method to add a rear caliper brake

Dunno about calipers, but if you Google "clamp-on cantilever brake mount" you'll find some adapters for canti or V-brakes. Cantis will work with caliper brake levers.

They make a pre-made electric Electra, it is going to be heaps better than a kit but not exceptional but at least was better designed to be an e-bike and actually has useful brakes. I don't like the idea of clamp on stuff as it could move and pivot too much and on a e-bike you want good braking. Plus it could also cause damage to a tube that is not designed to have something clamped to it for braking.

You need to clarify your terms. The term "caliper" generally goes along with disc brakes, not rim brakes. You need to add rim brakes since using a disc brake on your rear wheel would require an entirely new wheel. Ask anyone who has gone over the front end of a bike and they will tell you why using only a front brake is a very bad choice.
