By far the best to get a feel for what it takes to be a rider in the Tour de France, the film Pour un Maillot Jaune from 1965 is in a class by itself.Vive le Tour is another good short documentary from 1962. The Flying Scotsman is a good movie about the politics of the sports organizations that control the participants and make changes retroactively because they can.

Three videos that I have found really capture the essence if cycling, other than Breaking Away which is a great classic, are unReal, Le Ride, and Where the Trail Ends.
A few films on GCN (Global Cycling Network) are good also:

Just finished watching Le Bike, following the original 1923 TdF route in the same time frame - 28 days? What blew me away, other than the unreal mileage (about 150 miles/day) was the first stage in the Pyrenees was 200 miles with 20,000’ climbing in one day! And this is on the original heavy period bikes where to change gears, they had to remove the back wheel and manually move the chain to the sprocket of choice. Many didn’t finish since it was more a race of attrition.
