Question about sew ups vs. clinchers

Not really understanding the difference between sew ups and clinchers? Do sew ups refer to the tire alone or is it both tire and rim configuration. I recently bought a bike which I am planning to convert to single speed. It has a nice set of rims that came with sew ups on them and would like to get rid of sew ups and put on bigger tires on them. Is that possible?

Any feedback/clarification would be appreciated.
