Tubeless matter to you? Folding?
Schwalbe Marathons, & Continental Contact Speeds seem nice.

I had Marathons, and people recommended Vittoria Voyager Hypers to me at the forum. The latter roll better than Marathons. Also, Panaracer Pasela is a good tire, there is a PT version of it with puncture protection. Voyager Hypers and Paselas come in 32, 35 and 38.

Marathon is a good tire, but it may be a bit too heavy compared to the others.

I you want to go even narrower, check whether the rim width would allow that.

Do you prefer a reflective white stripe or not? Many Schwalbes, which are usually good tires, come with that reflective stripe -- just something to be aware of. One Schwalbe I like, and with which I have personal experience, is the Little Big Ben, in 700x38 (also marked 40-622, but it's the same tire). It's lighter and, from what I understand, more supple than the Marathon (better ride). I have a pair that I've used on various bikes in my fleet, and they're currently on my wife's Trek hybrid.

The Panaracer Pasela PT is supposed to be a fantastic tire. They come in a very attractive tan/gum wall design, and they're noted to be one of the better riding tires you can buy. These may look out of place on your Cypress, or they might look really nice on it; it probably depends on the color scheme. I think they may also be available in blackwall, but I'm not sure.

I heartily recommend the Continental Gatorskins...My last pair lasted so long with no flats that I had to relearn how to change a tube when I tried different tires. I ride where it's impossible to avoid thorns and I'm so happy I got another set of Gatorskins! Plus they are pretty easy to find in several sizes.
