Intro and first question

Hello all,
From what I can see, this is an awesome source of information and I look forward to the exchange.
I am 52 years old and love cycling every chance I get (between work and kids). I live in Newan, GA, just south of Atlanta and I am a member of Southside Cycling Club.
My focus now is on enjoying weekend rides with our club and finding new centuries around the country. I just did the Tony Serrano and it was great. The best century yet for me.
Now, on to my question.

Current Bike is a Giant Defy Alliance- aluminum bottom and carbon upper and fork. Full 105. This has been a great bike, but I am ready to make the move to a full carbon and the new Ultegra.
Budget $2250 ish

I prefer a little more upright ride. So, I have considered Trek Domane, Specialized Roubaix, Giant Defy Advanced 1 and Kestrel RT 1000 Ultegra.

Of the Giant, Trek and Specialized, I felt the Giant Defy Advanced 1 was the best value at $2,650 for full Ultegra and disc brakes. But, with tax that bumps up to around $3,000
I found a 2014 Giant Defy Advanced 1 Demo for $1,900, but it is baby blue with orange and I am not sure of the color scheme. But, to get a $3,200 bike for $1,900 may make it worth it.

The other choice is the Kestrel RT 1000 Ultegra. I can get this bike from Performance Bike for $2,299 with double points back. This means I would get $460 back that I can use for anything I want in the store. That brings the net cost to around $1,840 for full Ultegra. Anything purchased from Performance has a life time warranty, which helps my concern about not knowing much about Kestrel.

Thanks in advance for your feedback on which route I should go. I love the look of the Kestrel and I think it would be fast and comfortable. I also love the long history and big company name of Giant.
