Looking to add to the collection

Hi All,
I've been looking at this forum for some time now as I go through the process of finding a new bike. I live in Melbourne, Australia which is an increasingly great city for cycling and have realised that its time to replace my 30 year old but much loved steel framed Hillman that I bought to ride around Tasmania all of those years ago.

So I'm looking for advice. I am 50 years old but have kept riding all of those years and want something that is a light ride to commute to the city (about 20 ks return) but will carry some gear as well as be okay for the occasional country tour. I have narrowed the choice down to three bikes - a Trek 7.5FX, a Giant Cross-city 1 or a Specialized Vita Comp. They all look like good options - my only concern is that they might not be hardy enough as an an all-purpose bike although I do have a Dahon fold up that I use as city bike that I can take on the train while wearing work gear. So that function is covered. So this bike is for the longer road rides and some touring. Any advice or other suggestions are welcome.
