fat bike racing - difference from mtb

I am not as active cycling as I used to be, age does that. But I see that cycling usa will have a fat bike championship.

Is there any thing particularly different between ftb and mtb races in terms of course layout? Sort of like you could use an mtb in cx, but its not really the appropriate bike because of course layout. What would make us1ing an mtb a hindrance in an mtb other than rules limiting tire size.
