first new bike in several years, help?

So, I posted here a LONG time ago with my walmart BSO. And I kinda got into running and horseback riding, and haven't biked much. But, I live out in the middle of nowhere and though running is fun, I am near some great bike trails. My house is on a dirt road with a decent hill and deep ruts, I have 2 miles of paved road and then nothing but dirt for 30 miles. I want to ride on the road but also want the option of doing some light off road, goat trails, low lever mtn bike trails, and maybe some small game hunting. I looked around and my options are something from bikes direct like a cyclocross, maybe the zilla for 599, Save up to 60% off new Road Bikes - Gravity Liberty 2 | Save up to 60% off new road bikes, or a Trek 3500D from my local scheels for 479, or a specialized hardrock disk 29 for 520. I'm leaning toward the hard rock, it's cheaper than the zilla, has lockout on the forks and is from a local shop. The 3500D lacks lockout. I'm about 5'6 and 170lbs. Am I thinking the right type of bike for the riding I will be doing, and will one of these fit the bill, 500 is about my limit so the hardrock seems to be the way to go. Would I be better off having them order in a hardrock SE 26, given my height however? Any opinions would be great. Thanks in advance guys.

..wait, what?

are we talking about rabbit hunting with a shotgun, or squirrels with a .22LR? because I would be down for that, but only on a fatbike.

Lol I'm poor, I have to be able to do quite a few things on one bike. But..probably both and maybe some archery too.

Yeah you want to do all kinds of stuff and ride all kinds of surfaces with guns and bows on your back,,,get any 29er HT

With a $500 budget just pick a color you like,,you'll be fine..

Or,,,get a fatty

I went with a Trek 3500D. Some really shady dealings at the LBS that I won't get into but my confidence dropped in their honesty and I left. I know my front fork sucks, but the rest of the bike seems decent and at 479 for the 3500, even with upgrading the fork I feel like I did ok at least.
