Getting kids started mountain biking

Kids have been riding a lot with me lately. How do I know when they are ready for single track?

is there a bmx track near you? if your 7 y/o can get some practice there, on groomed dirt, he'll have a much easier transition to MTB trails.

+1. There's a little mini make-shift pump track near the trailhead of one of the easier trails where I live, and that helped my 8 year old a lot with getting comfortable riding off-road. He's not a real daredevil either, so we'd just stick to pretty easy stuff, and walk anything where he's not up to the task.
One piece of advice I'd offer--not sure how your kid is about taking direction, but my son (now almost 10) got sick of me constantly giving him riding tips while we were on the trail (I was just trying to make it easier and safer for him of course and his interest in it waned a good bit after a while!
