Recommendations for awesome trails WA/OR/maybe Colarado ???

Hey, so plenty of you are already Stateside, so you're all experts as far as i'm concerned. I'm looking at maybe winging into this part of the US en route to a work thing in Orlando (I know, all over the show...) but I may have a chance to get a few colleagues together for 2 or 3 days of riding up this way. Probably not a multi-day epic, more likely just awesome trails to hit daily for a couple of days. Whats the one spot I can't miss? If I only ride in this part of the world once, where would it be?
