Finally got our bikes.. Any advice to newbies

My girlfriend and I finally purchased our 05 Specialized Stumpjumpers after about a month of find the best deal. Any advice on how to take care of our bikes, things to adjust, etc...? Basically, I am pretty new to mountainbiking. I've been into freestyle/bmx for quite some time prior. Any suggestions on a good bike rack I should pick up for these bikes (I drive a VW Jetta.) We plan on riding around the neighborhood as well as hitting the trails on the weekend upstate since we are from NYC.

Any advice at all would be greatly appreciated!
