New set of wheels

I presently have 29" boost 30mm rims with 2.6" tires. I use these for single track and down hill. I want to get a new set for road/gravel touring. With the intent of 2"-2.2" tires- Is 30mm rim width suitable, or might I find 25mm (if available) better suited?
I don't want to just switch out tires with the hassle of tubeless, it's easier to just get an extra set and change out in a moment
I want to lighten the overall weight of the wheels and tires.

I've used this chart for compatible and optimal tire sizes to rim sizes:

Should answer your questions on if it would fit ok or if you should choose a size for a proper fit.
