Steel 1 1/8" threadless stems?
Anyone know of any nice steel stems? Also comfort bars, again preferably steel, something like the Nitto Dove bar.

Why in the heck would you want a steel bar and stem?
it can't be a vibration issue since a carbon bar with a good quality AL stem will do just as good of a job, if not better.
If you MUST have steel try Rivendell, personally I've worked on too many bikes whose handlebars had bubbling rust bursting through chrome.

In my opinion a steel stem looks nicer than an Al one. I don't think matters of taste can be intelligently argued, but feel free to try.
