Hey guys, what's the general rule of thumb to correct seat height on a mountain bike? Is it the same as a road bike, where I have it set so I can barely touch the ground with my tippy toes?

depends on what and how you ride. If you are looking for maximum pedaling efficiency, then yes.
If you are looking for a height that you can pedal while also riding down hill more comfortably, then you might want to adjust it down an inch or a few.
If you are hucking off of cliffs............then you might want to slam it down a bit more

yep.. for me the road/easy trail setting is where there's a slight bend in my knee when the pedal is all the way down. on medium technical trails its where there's quite a bend in my knee - for that i drop the seat about 3 inches. if the trail is very hard and/or steep downhill and/or i will be standing up most of the time i just drop it all the way down and velcro my saddle bag around my stem. if i forget to raise it back up when the trail gets easier my knees let me know via sharp pains or cramps
