Question about G2 geometry & forks

I found some nice deals on G2 specific forks and am not clear on how big a difference this would make if mounted on a Jamis Dakar XC Comp FS mountain bike. Both forks are 100mm travel and while I understand that Fisher has the offset increased about 5mm, I can't anticipate if this would make any difference to a fat, old, slow trail rider like me. The theory says that slow speed handling would be enhanced at the expense of high speed handling - would an average rider even notice though?

thats when they are mated with a frame that also has the G2 geometry
