You've come across the phenomenon of riding aerobically versus riding anaerobically. It all has to do with our aerobic mindset where we always try to pace ourselves and save ourselves for the long haul. Even when faced with an interval type of riding sequence we will tend to not give it our all.

That or you just might suck.
