Current popularity/state of components?

I've been out of the loop for about 5 years now, but suddenly find myself building up a few frames I had collecting dust in the barn for some family.

Anyway what are the current preferred standards for XC-AM (durable mid range stuff) rims, hubs, cassettes, brakes, etc. I'm not looking for brands here, just types and standards. ie 7/8sp is dead and 11(12?) cog cassettes standard fair on road bikes, but on MTBs? Any XC forks using 20mm axles yet? Are [true]UST rims hard to build due to the lack of spoke holes?

Oh and do 10 and 11 speed cassettes use the same hubs, like 8&9 did?
