Looking for an epic birthday ride

Looking for a one week ride to celebrate a birthday and another year riding. Anyone have any recommendations. Last one I did was a cross Scotland ride; west coast to east coast. Great ride, but not enough single track.

Well, I ended up doing the Pyrenees, Atlantic to the Med. It was epic.
