Newb needing new bike advice, I have already ridden a few.

Hi everbody!
I am a long-term lurker but first time poster.
I have been thinking about biking for a while now and I need advice on which bike to get/consider. I am new to mountain biking so I want to get a sort of jack of all trades bike so I can explore as many different disciplines (are they called disciplines ?) as I can. I spent the day driving to different bike shops and trying different bikes and all I managed to determine is everything is better than my big box mongoose. Out of the bikes I rode, I like the trek x caliber, specialized rock-hopper and giant talon 27.5 about equally. I liked the giant dealer/dealership the best, but the others weren't particularly bad.

I guess I have 3 questions.
1. If you like all of the bikes equally, which one do you choose?
2. what is the best bag for your buck version ?
3. is there another company/model I should have considered but didn't ?

I am willing to spend up to about 1k, but are any of these 'keepers' at this range, or will I likely want to trade them up soon no matter what component level I go ? If these are all just going to be gateway bakes, what is the lowest version I will likely be happy with ? If it helps, I found a 2013 rockhopper comp 29 discounted to 929 at one of the stores.

I did a little more searching and found last year's talon 27.5 5 for 520 on clearance and last years x caliber 4 for 499. Are either of these good buys? It looks like the giant has more suspension travel and a lockout.
