I have garneau mt bike shoes but they don't make that loud noise when locking into my crankbros mallet pedals, any idea why?

Test that they're latched securely and if so, don't sweat it. Sometimes things like the curvature of the sole, or other factors can interfere with solid engagement, or cause it to be such a kiss fit that it's very quiet. My look cleats are borderline and one clicks in pretty quietly and the other with a loud CLACK. It doesn't bother me since both are latched securely and release as they should.
