As welshterrier2 mentioned above, Bikes Not Bombs is a great place. They do great charitable work which you can volunteer for, and all profits from their full-service bike shop go to supporting that work. They do an open shop from 7 to 9:30pm every other Thursday. However, you have to trade volunteer hours or monetary donations for open shop hours. https://bikesnotbombs.org/tool-time
The following coops do a traditional open shop:
The Community Spoke, Jamaica Plain -- https://thecommunityspoke.org/ -- open shop on Tuesdays from 6-9 at the coop's own shop in JP
CommonWheels, Allston -- https://www.commonwheels.org -- open shop on Wednesday evenings from 5:30-dark and Saturdays from 11-3 at the Allston Village Farmer's Market, both at Jackson Mann Community Center
BU Bikes , Boston University -- https://bubikes.bostonbiker.org -- open shop on Thursdays from 11 to 2:30 at the Boston University Farmers Market outside the student union on Comm Ave
(Full disclosure: I volunteer at all three.)
Also worth a mention is Broadway Bicycle School in Cambridge. They're not a coop, but you can pay to use tools in their shop by the hour, and they teach classes. https://www.broadwaybicycleschool.com

If you're near JP, I'd say Community Spoke offers the best combination of facilities, availability, expertise, and no barrier to entry.
